These chicken bites are my secret weapon on busy nights. Cornstarch gives the chicken golden, slightly crispy edges, and the sauce is a simple mix of honey, garlic, butter and soy that turns sticky and glossy in just a few minutes. Kids love them, grown-ups love them, and there is only one pan to wash.

Why this recipe works

The sauce secret

A great honey garlic sauce needs balance. Honey brings sweetness and that sticky texture. Soy sauce adds salt and savory depth. Butter makes it rich and glossy. A splash of rice vinegar or lemon keeps it from tasting too sweet. Together they cook down into a glaze that clings to every piece.

Mistakes to avoid

Crowding the pan. Too much chicken at once steams instead of browns. Cook in two batches if needed.

Burning the garlic. Thirty seconds is all it needs. Keep the heat moderate.

Reducing too long. The sauce thickens fast and keeps thickening off the heat. If it gets too sticky, add a splash of water.

What to serve with them

Steamed jasmine rice and roasted broccoli is our favorite, but fried rice, noodles, cauliflower rice or garlic green beans are all great. They also work as a party appetizer with toothpicks.

Storing

Keep leftovers in the fridge for up to 4 days, or freeze for 2 months. Reheat in a skillet with a splash of water so the sauce loosens up again.

Questions, answered

Can I use chicken thighs?

Yes. Boneless thighs stay extra juicy. Cut them into bite-size pieces and cook a minute or two longer.

My sauce got too thick. What now?

Stir in a tablespoon of water at a time over low heat until it is glossy again.

Can I make them in the air fryer?

Yes. Air fry the coated chicken at 400°F for 10 to 12 minutes, shaking halfway, then toss in the sauce.
