Tuscan Sausage & Cannellini Soup

Browned sausage, creamy white beans and a handful of greens: this soup tastes like it simmered all day.

This is my favorite kind of weeknight soup: one pot, simple ingredients and big flavor. As the sausage browns it leaves behind a savory layer on the bottom of the pot, and that flavor ends up in every bean and vegetable. Add some greens at the end and you have a full dinner in a bowl.

Tuscan Sausage & Cannellini Soup

Why it works

Little things that make a big difference

Take your time with the vegetables. Let the onion, carrot and celery soften properly before adding the liquid. That is the base of the whole soup.

Add greens last. They only need a couple of minutes, so they stay bright green.

Adjust the thickness. Simmer uncovered for a thicker soup, or add a splash of broth to thin it.

Variations

It is naturally gluten-free as long as your sausage is, so check the label.

What to serve with it

Crusty bread or garlic toast for dipping, a crisp green salad, and plenty of grated Parmesan on top. A drizzle of good olive oil right before serving makes it feel restaurant-worthy.

Leftovers

It keeps for 4 days in the fridge and honestly tastes even better on day two.

Questions, answered

Hot or mild sausage?

Either works. Hot sausage gives a gentle kick, mild keeps it family-friendly. You can also use half of each.

Can I use dried beans?

Yes. Soak and cook them first, then use about 3 cups of cooked beans in place of the cans.

Does it freeze well?

Very well. Freeze for up to 3 months, thaw overnight in the fridge and reheat on the stove. Add the greens fresh if you can.
